From Sauvignon grapes grown on the Collio’s characteristic marl and sandstone soil.
The grapes are picked early in the morning and left to macerate at low temperature for a whole night. Fermentation, which lasts for about two weeks, is in steel at rigorously controlled temperatures. The wine stays on the fine lees until maturation is complete.
